Cumin pickled herring and Västerbotten cheese, Honey-orange pickled herring and Eggen blue cheese, Beetroot pickled herring and Myrdal goat cheese.

Fallow deer & Mushroom
Fallow deer tartar with lightly cooked egg yolk, truffle & shitake emulsion, parmigiano and deep fried oyster mushrooms.
Cod & Beetroot
Smoked cod and beurre noisette pate. Served with pickled shallots & cucumber, olive soil and beetroot gel. Topped of with beetroot crisps and cress.
Chantarelle & Västerbotten
Creamy chantarelle soup served with swedish västerbotten cheese foam, chantarell crisps and västerbotten croutons.
Mains
Arctic char & Butter
Pan-fried arctic char served with dill, beurre noisette and lemon mashed potato. Brown butter sauce, butter powder and white asparagus.
Duck & Lingonberry
Slow cooked duck breast served with carrot purée, celeriac cooked in butter, kale crisps, black currant sauce & lingonberry foam.
Reindeer & Juniper berry
Grilled inside round of reindeer served with potato confit, roasted and glazed brussels sprouts, chestnut purée & juniper berry gravy.
Gnocchi & Black garlic
Homemade gnocchi served with wild mushrooms, Norwegian goat cheese, black garlic emulsion, thyme oil & roasted pine nuts.

Chocolate & Cloudberry
Chocolate cremeux made with 70% Vahlrona, served with cloudberry granita and coulis. Topped of with pink pepper powder and raspberries
Brown Cheese & Honey
Cheesecake made from Norwegian brown cheese served with port wine glazed figs, honey ice cream and roasted walnuts.
Apple & Tonka
Apple & blueberry crumble served with tonka ice cream, salted caramel sauce & rum marinated raisins.
