In a backyard in the center of Trysil you will find the artisan bakery Glunot. Glunot is widely known for its gluten-free products. As you open the door to the bakery, the taste of Italy dances towards you and the boss himself, Raimondo Arnone, smiles broadly and says hello in both Norwegian and Italian.

In the bakery, the atmosphere is warm and cozy. Gluten-free products are baked and produced here, in addition there is also a small shop and a nice café area. Locals, cabin owners and visitors head to Glunot to buy gluten-free baked goods, gourmet Italian products and eat freshly baked pizza or have a cup of Italian coffee on site. In the shop you will find all the products that Glunot produces, as well as pasta, rice, risotto, olive oils, pasta sauces, tomato products, coffee, and much more tasty stuff. Everything completely gluten-free.

But why Glunot? Raimondo Arnone explains.

"In 2008, I moved from Italy to Norway and Trysil to work as a deputy manager at Radisson Blu Trysil. There I discovered a great need for tasty, high-quality, gluten-free food. This inspired me, and in 2016 Glunot became a reality. At that time, I had worked a lot with the development of recipes and flour mixtures.

Raimondo, or Chef Dino as he calls himself, continues. 

"The goal is to offer people with coeliac disease or other food intolerances good and healthy alternatives. But even those who do not have food intolerances appreciate our products. As a confirmation that we have succeeded, in 2018 we were awarded the award as gluten-free company of the year by the Norwegian Coeliac Association. It was great," beams Chef Dino!

Italian bakery products from Trysil 

It's actually absolutely fantastic! At Glunot's production facilities in Løkjasvingen in Trysil, Chef Dino and his team bake over 40 different products that are sold in and outside Trysil, and it ranges from bread, pizza, biscuits and cakes. Products produced by Glunot can be purchased throughout Norway. Every year, they sell 140,000 pizzas out of Trysil.

"We sell to the whole country with our distributor," says Dino. "In addition, 40-50 shops buy directly from us, and they are based as far as Oslo, Trondheim,  Hamar, Tønsberg and Gjøvik. They buy both frozen and dry goods."

Purchase online and in the shop

Glunot wants as many people as possible to have the opportunity to get to know gluten-free products. Therefore, they have several sales options. 

"Of course, we sell all our products in the shop in Trysil," says Dino. In addition, we have an online store. We are very pleased with the sales there and in 2024, we sold 1600 units via the online store. Bread products are most popular, and we are also a regular bread supplier to several customers. Also in the physical bakery in Trysil, the most popular product is bread. 

Glunot has a good collaboration with several eateries in Trysilfjellet. Dino highlights la Pasteria, Radisson Blu, SkiStar Lodge and Marielle's Snackbar all serve products from Glunot.

Everybody loves pizza

Glunot's stone oven baked pizza has a good reputation. Dino says that he has customers who make the trip from both Hamar and Elverum to buy pizza and other products in the store for takeaway. 

"It's nice that pizza and other products are an opportunity for people to make the trip to Trysil. The pizza base is made with my own pizza flour mix. That's my recipe, and we import 20 tons of pizza flour a year. 

"In summary, I can say that things are going in the right direction for Glunot. I have been in business for eight years now and notice that more and more people are asking for our products. 

What about pizza classes, Dino? Surely there are many who want to learn the art of pizza from a real Italian?

"Dont worry, there will be classes in 2025. In 2024, I planned three classes, and all of them were fully booked. It's fun! I think 2025 will be a fantastic year for Glunot," concludes Raimondo, Dino, Arnone.
